Cauliflower Gnocchi Quinoa Brussels Sprouts Bake
Ingredients
- 2 cups brussels sprouts, sliced
- olive oil
- garlic powder
- salt and pepper
- 2 bags Trader Joe's cauliflower gnocchi
- 2 cups cooked quinoa
- 1/2 cup marinara sauce + more as needed
- 1/2 cup shredded mozzarella cheese
- red pepper flakes
Preparation
Preheat the oven to 400 degrees.
Line a baking sheet with parchment paper and lay out the brussels sprouts.
Drizzle with olive oil and season with garlic powder, salt and pepper.
Roast for 25 minutes.
Cook the gnocchi for 12 minutes in the air fryer at 400 degrees, first spritzing with olive oil cooking spray.
Add the gnocchi, quinoa, brussels sprouts, and marinara sauce to a large bowl and toss together.
If it is too dry, add more marinara sauce.
Transfer the mixture to a baking dish, spread out evenly, and then sprinkle with mozzarella cheese.
Bake for 5-10 minutes or until cheese melts.
Serve, garnished with red pepper flakes.
