Chai Spiced Blueberry Pancakes
Ingredients
- 1 cup all-purpose gf baking flour
- 1/3 cup oat flour (could sub almond flour)
- 1 tsp baking soda
- 1 tsp salt (save some for sprinkling)
- 2-3 tsp of chai spice blend
- 3 tbsp brown sugar
- 2 eggs
- 1/3 cup vanilla almond milk
- 2 tbs ghee, melted, plus extra for greasing the griddle/pan
- 1 cup fresh or frozen blueberries
- cinnamon
- ginger
- cardamom
- ground black pepper
- nutmeg
- cloves
Preparation
Combine dry pancake ingredients (everything up through the chai blend)
Beat the eggs together with sugar, almond milk, and ghee
Add the dry ingredients into the egg mixture
Stir in blueberries
Heat a griddle or cast iron pan and spread with ghee
Drop even amounts of batter, cooking each side until there are some bubbles and browning
Top with more ghee, maple syrup, granola, and bananas
