Cheesecake Banana Bread
Ingredients
Banana bread
- 2 cups flour (spelt flour)
- 1/2 cup brown sugar
- 2/3 cup plant milk
- 2-3 mashed bananas
- 2 tbsp melted coconut oil
- 2 tsp baking powder
- 1/2 tsp vanilla extract
Cheesecake layer
- 1 block tofu (200g)
- 1/2 cup coconut cream
- 3-4 tbsp sugar
- 1 tbsp potato starch
- 1/2 tsp vanilla extract
- 1 tbsp lemon juice
Preparation
Blend all the ingredients for the cheesecake layer.
In a separate bowl, mix the ingredients for the banana bread.
Pour half of the banana bread batter into a loaf pan lined with parchment paper.
Spread the cheesecake layer evenly over the batter.
Add the remaining banana bread batter on top.
Bake at 360°F (180°C) for 40 minutes.
