Cherry Bakewell Cheesecake


  • 40g Grape-Nuts cereal
  • Moroccan almond extract
  • 1/2 tbsp erythritol gold sweetener
  • 1.5 tbsp hot water
  • 2 tsp cherry compote
  • 3 Laughing Cow extra light cheese triangles
  • 0.5 cup Linda's Kvarg white chocolate
  • Foodie Flavours cherry flavouring
  • Sweetener
  • 3 Marks and Spencer mini shortbread cookies
  • Half a glacé cherry

How to steps

  1. Blitz the Grape-Nuts cereal into a fine crumb.

  2. Mix Moroccan almond extract, erythritol gold sweetener, and hot water together and press into an individual pie tin.

  3. Add cherry compote, Laughing Cow cheese triangles, Linda's Kvarg white chocolate, cherry flavouring, and sweetener to a bowl and mix well.

  4. Add a few tablespoons of the cheesecake mix to the pie tin.

  5. Dip the Marks and Spencer mini shortbread cookies in milk and press into the center of the tin.

  6. Add more of the cheesecake mix and level off.

  7. Top with half a glacé cherry.
