Cherry Bourbon Cake Parfaits
Ingredients
- Vanilla cake mix
- 4-6 cups cherries (fresh or frozen)
- Sugar
- Vanilla extract
- Bourbon
- Heavy whipping cream
- Powdered sugar
Preparation
Bake vanilla cake using gluten-free mix and let it cool.
Sauté 4-6 cups of cherries until the liquid thickens.
Add 2 tablespoons sugar, 1 teaspoon vanilla, and 2 tablespoons bourbon to the cherries and cook until thickened.
Whip 1 cup heavy whipping cream with 1 teaspoon vanilla and 2 tablespoons powdered sugar until peaks form.
Layer in glasses or jars: crumbled cake, warm cherries, and whipped cream. Optionally add mini chocolate chips or more fruit.
