Cherry Bourbon Cake Parfaits

Ingredients

  • Vanilla cake mix
  • 4-6 cups cherries (fresh or frozen)
  • Sugar
  • Vanilla extract
  • Bourbon
  • Heavy whipping cream
  • Powdered sugar

Preparation

  1. Bake vanilla cake using gluten-free mix and let it cool.

  2. Sauté 4-6 cups of cherries until the liquid thickens.

  3. Add 2 tablespoons sugar, 1 teaspoon vanilla, and 2 tablespoons bourbon to the cherries and cook until thickened.

  4. Whip 1 cup heavy whipping cream with 1 teaspoon vanilla and 2 tablespoons powdered sugar until peaks form.

  5. Layer in glasses or jars: crumbled cake, warm cherries, and whipped cream. Optionally add mini chocolate chips or more fruit.
