Chickpea Tikki Burger with Hummus

Ingredients

Chickpea tikki

  • 1 cup soaked chickpeas
  • 2 finely chopped garlic cloves
  • 2-3 green chilies
  • small bunch of spring onions with greens
  • large bunch of chopped coriander
  • 1.5 teaspoons cumin seeds
  • 0.5 teaspoon baking powder
  • salt to taste
  • 2 tablespoons besan (lightly dry roasted)

Hummus

  • 0.5 cup soft pre-boiled chickpeas
  • 2 tablespoons tahini
  • 1 teaspoon chopped garlic
  • salt to taste
  • roasted cumin powder to taste
  • juice of 1 lime

Burger assembly

  • burger buns
  • lettuce leaves
  • onion
  • tomatoes

Preparation

Making chickpea tikki

  1. In a mixer jar, add soaked chickpeas, garlic, green chilies, spring onions with greens, chopped coriander, cumin seeds, baking powder, and salt, then coarsely grind the mixture.

  2. Transfer the ground mixture to a bowl, add besan, form it into tikkis, and shallow fry or air fry until golden and cooked through.

Making hummus

  1. In a blender, combine pre-boiled chickpeas, tahini, chopped garlic, salt, roasted cumin powder, and lime juice, then blend until smooth.

Assembling the burger

  1. Grill the burger buns until lightly toasted.

  2. Spread hummus on the grilled buns, add lettuce leaves, onion, tomato slices, and the chickpea tikki, then assemble the burger.

Tips

  1. For homemade tahini, dry roast white sesame seeds, grind them in a mixer, and mix with 2 tablespoons of curd to achieve a similar taste.
