Choc Mint Mousse Cups

Ingredients

  • 400ml coconut cream
  • 90g vegan mint chocolate pieces
  • 1 tbsp cacao powder
  • 1 tbsp cornflour
  • 1/4 tsp vanilla extract

Preparation

  1. Add coconut cream, cacao powder, sweetener and cornflour to a saucepan and whisk until blended

  2. Heat over medium, whisking regularly for 3-5mins until smooth and thickened

  3. Remove from heat and add the chocolate and vanilla

  4. Stir until melted and smooth

  5. Pour into serving glasses

  6. Place in the fridge for 30mins or overnight to chill and set

  7. Top with choc curls, fresh mint leaves and cacao nibs if desired
