Chocolate Chip Cookie

Ingredients

  • - 1 cup melted vegan butter
  • - 3/4 cup organic brown sugar
  • - 1/3 cup organic cane sugar
  • - 21/2 cups all purpose flour
  • - 1 teaspoon salt
  • - 1/2 tablespoon baking powder
  • - Egg Replacer or flax eggs (equivalent to two large eggs)
  • - 1.5 teaspoon vanilla extract
  • - 1.5 cups semi-sweet vegan chocolate chip
  • - 1/2 cup chopped walnuts

Preparation

  1. Whisk melted butter, both kinds of sugar, and vanilla extract until well combined. Combine in your

  2. On a separate large mixing bowl, whisk together your dry ingredients such as the flour, salt, baking and powder

  3. Combine liquids little by little to the dry ingredients and mix with a spatula. Keep adding liquids until it creates a sticky-dough like consistency

  4. Fold chocolate chips and walnuts to the dough. Form cookie dough to a giant ball and allow it to chill in the fridge for 30-45 minutes. Chilling the dough is crucial. It will be a lot easier to handle when cold

  5. Scoop chilled cookie dough (about 1/4 cup each), roll into a ball (does not have to be perfect), and place on a parchment-lined baking tray. Cookie should yield about 14-16 pieces depending on the size of what you scoop

  6. Bake at 375°F for 14 minutes. You will know it is done when it is golden brown all around but still tender on the center

  7. Place on a cooling rack and enjoy
