Chocolate Mandarin Orange Cupcakes
Ingredients
- 1 can Del Monte mandarin oranges in extra light syrup
- 2 eggs
- 3 tbsp oil
- 1/3 cup cacao powder
- 3/4 cup brown sugar
- 1 tsp vanilla
- Zest of 1 orange
- 1 tsp baking soda
- 1 tsp baking powder
- 1 3/4 cup flour
- 1/4 tsp salt
For frosting
- 1 cup heavy cream
- 1/3 cup brown sugar
- 1/2 cup cacao powder
- 1 tsp vanilla extract
- 1/4 tsp salt
Preparation
Preheat the oven to 350 degrees F.
Blend the mandarin oranges (not drained) for a few seconds.
In a medium mixing bowl, whisk together mandarin juice, eggs, oil, brown sugar, orange zest, and vanilla.
Add in the flour, baking soda, baking powder, and salt. Mix until no clumps remain.
Fill 12 lined muffin slots almost to the top with the batter.
Bake for 22-24 minutes.
Let the cupcakes cool, then top with frosting, orange zest, and extra mandarin slices.
