Cinnamon Apple and Pecan Pancakes

Ingredients

  • 1 cup simplemills pancake mix
  • 2 eggs
  • 2 tbsp water
  • 2 tbsp coconut oil

Toppings

  • cubed apples
  • halved pecans
  • 1/2 tbsp coconut oil
  • dashes of cinnamon
  • nut butter
  • yogurt of choice
  • warm maple syrup

Preparation

  1. In a bowl, mix 1 cup simplemills pancake mix, 2 eggs, 2 tbsp water, and 2 tbsp coconut oil until smooth.

  2. Heat a skillet or griddle over medium heat and cook the pancake batter in rounds until golden brown on both sides.

  3. In a separate pan, heat 1/2 tbsp coconut oil over medium heat, add cubed apples and halved pecans, sprinkle with dashes of cinnamon, and sauté until apples are tender.

  4. Serve the pancakes topped with the sautéed apple mixture, drizzly nut butter, yogurt of choice, and warm maple syrup.
