Classic Cherry Bakewell Cheesecake

Ingredients

  • 40g Grapenuts UK
  • Moroccan almond extract
  • 1/2 tablespoon Nkdliving erythritol gold
  • 1.5 tablespoons hot water
  • 2 teaspoons Asda cherry compote
  • 3 Laughing Cow extra light cheese triangles
  • Lindahls kvarg white chocolate
  • Cherry flavouring
  • A little sweetener
  • 3 Marks and Spencer mini shortbreads
  • Half a glacé cherry

Preparation

  1. Blitz the Grapenuts into a fine crumb.

  2. Mix the crumb with Moroccan almond extract, 1/2 tablespoon erythritol gold, and 1.5 tablespoons hot water, then press into an individual pie tin with a strip of greaseproof paper for easy removal.

  3. In a bowl, mix 2 teaspoons cherry compote, 3 Laughing Cow extra light cheese triangles, Lindahls kvarg white chocolate, Moroccan almond extract, cherry flavouring, and a little sweetener.

  4. Add a few tablespoons of this cheesecake mixture to the crust.

  5. Dip 3 mini shortbreads in milk and press into the center.

  6. Add more of the cheesecake mixture and level it off.

  7. Top with half a glacé cherry.
