Classic Cherry Bakewell Cheesecake
Ingredients
- 40g Grapenuts UK
- Moroccan almond extract
- 1/2 tablespoon Nkdliving erythritol gold
- 1.5 tablespoons hot water
- 2 teaspoons Asda cherry compote
- 3 Laughing Cow extra light cheese triangles
- Lindahls kvarg white chocolate
- Cherry flavouring
- A little sweetener
- 3 Marks and Spencer mini shortbreads
- Half a glacé cherry
Preparation
Blitz the Grapenuts into a fine crumb.
Mix the crumb with Moroccan almond extract, 1/2 tablespoon erythritol gold, and 1.5 tablespoons hot water, then press into an individual pie tin with a strip of greaseproof paper for easy removal.
In a bowl, mix 2 teaspoons cherry compote, 3 Laughing Cow extra light cheese triangles, Lindahls kvarg white chocolate, Moroccan almond extract, cherry flavouring, and a little sweetener.
Add a few tablespoons of this cheesecake mixture to the crust.
Dip 3 mini shortbreads in milk and press into the center.
Add more of the cheesecake mixture and level it off.
Top with half a glacé cherry.
