No-Bake Loaded Caramel Popcorn Cheesecake

Ingredients

Base

  • 40g grapenuts
  • 1 teaspoon popcorn syrup
  • 1 teaspoon erythritol gold
  • 1 tablespoon hot water

Filling

  • 3 extra light cheese triangles
  • vanilla kvarg
  • 2 teaspoons popcorn syrup
  • few grains of sea salt

Toppings

  • 1/3 bag sweet popcorn
  • 1 tablespoon salted caramel sauce
  • 1 tablespoon popcorn syrup
  • 10g dark chocolate

Preparation

  1. Blitz grapenuts into a fine crumb

  2. Mix the crumb with popcorn syrup, erythritol gold, and hot water, then press into a lined 3.5-inch chefs ring

  3. Mix cheese triangles, vanilla kvarg, popcorn syrup, and sea salt, then add to the ring

  4. Refrigerate overnight

  5. Mix sweet popcorn with salted caramel sauce and popcorn syrup

  6. Melt dark chocolate and drizzle over the mixture

  7. Add the popcorn topping
