Lemon Cheesecake for Breakfast
Ingredients
Base
- 40g Grape Nuts
- 1/2 tablespoon erythritol gold
- 1/2 tablespoon lemon juice
- 1 teaspoon Sicilian lemon extract
- 3/4 tablespoon hot water
Filling
- 3 Laughing Cow extra light cheese triangles
- Lindahl's vanilla
- 1/2 tablespoon lemon juice
- 1 teaspoon Sicilian lemon extract
- Sweetener, to taste
Topping
- 3 Hotel Chocolat lemon balls
- 1 tablespoon lemon curd
- 3g white chocolate
Preparation
Blitz the Grape Nuts into a fine crumb.
Mix the base ingredients together and press into a lined 3.5 inch chef's ring.
Combine the filling ingredients and add to the ring.
Melt the lemon balls and lemon curd together and pour over the mixture.
Melt the white chocolate and drizzle over the top.
