Cherry Bakewell Cheesecake Breakfast Treat

Ingredients

  • 40g grape nuts
  • 1/2 tablespoon erythritol gold
  • Moroccan almond extract
  • 1 tablespoon hot water
  • 1 tablespoon morello cherry compote
  • 3 laughing cow extra light cheese triangles
  • Lindahl's kvarg white chocolate
  • Sweetener
  • Moroccan almond extract
  • Cherry flavouring
  • 1 mini shortbread
  • 1 tablespoon erythritol icing sugar replacement
  • Moroccan almond extract
  • Cold water
  • 1/2 glace cherry
  • Signature coin

Preparation

  1. Blitz the grape nuts into a fine crumb.

  2. Mix with 1/2 tablespoon erythritol gold, Moroccan almond extract, and 1 tablespoon hot water, then press into a lined chefs ring.

  3. Add 1 tablespoon morello cherry compote to the ring.

  4. Mix 3 laughing cow extra light cheese triangles, Lindahl's kvarg white chocolate, sweetener, Moroccan almond extract, and cherry flavouring, then add to the ring.

  5. Refrigerate overnight.

  6. Crumble 1 mini shortbread around the edge.

  7. Mix 1 tablespoon erythritol icing sugar replacement, Moroccan almond extract, and cold water, then pour into the cavity.

  8. Add 1/2 glace cherry and signature coin on top.
