Cherry Bakewell Rice Pudding
Ingredients
- 3 teaspoons morello cherry compote
- 1 tablespoon raspberry coulis
- 85 grams pudding rice
- 100 ml 1% milk
- Cold water to top up to 450 ml total liquid
- Stevia drops (to taste)
- Moroccan almond extract (to taste)
- Cherry flavouring (to taste)
- 2 mini shortbreads
- 1/2 glacé cherry
Preparation
Combine cherry compote, raspberry coulis, pudding rice, milk, water, stevia drops, Moroccan almond extract, and cherry flavouring in a pot.
Cook on the hob for 30 minutes until thick and gloopy.
Crush the shortbreads and sprinkle around the edge.
Top with half a glacé cherry.
Notes
Total syns are approximately 6.5 to 7 depending on measurement interpretations.
Check for cochineal in glacé cherries; some are colored with it, but the ones from Morrisons are not.
