Cherry Bakewell Rice Pudding

Ingredients

  • 3 teaspoons morello cherry compote
  • 1 tablespoon raspberry coulis
  • 85 grams pudding rice
  • 100 ml 1% milk
  • Cold water to top up to 450 ml total liquid
  • Stevia drops (to taste)
  • Moroccan almond extract (to taste)
  • Cherry flavouring (to taste)
  • 2 mini shortbreads
  • 1/2 glacé cherry

Preparation

  1. Combine cherry compote, raspberry coulis, pudding rice, milk, water, stevia drops, Moroccan almond extract, and cherry flavouring in a pot.

  2. Cook on the hob for 30 minutes until thick and gloopy.

  3. Crush the shortbreads and sprinkle around the edge.

  4. Top with half a glacé cherry.

Notes

  1. Total syns are approximately 6.5 to 7 depending on measurement interpretations.

  2. Check for cochineal in glacé cherries; some are colored with it, but the ones from Morrisons are not.
