Almond Milk Rice Pudding

Ingredients

  • 1 cup pudding rice
  • 4 cups almond milk
  • Seeds from 1 vanilla pod
  • 2 tablespoons maple syrup

Preparation

  1. Put the rice in a fine sieve and rinse under cold running water until the water runs clear. Drain well.

  2. Put the rinsed rice, 1 cup almond milk, vanilla pod seeds and the vanilla pod into a large pan over low heat. Cook gently, stirring continuously to make sure it doesn’t stick.

  3. As soon as most of the liquid has been absorbed, add another cup of milk. Keep stirring. Repeat this until you’ve used up all the milk.

  4. Serve warm or cold with a drizzle of honey and fruit.

Notes

  1. Make sure to take your time with cooking to achieve a creamy texture.

  2. The pudding will thicken as it cools and can be reheated if desired.

  3. It pairs well with various fruits like raspberries, toasted almonds, stewed apples, or plums.
