Dairy-Free Almond Rice Pudding
Ingredients
- 1 cup pudding rice
- 5 cups unsweetened almond milk
- 1 tbsp vanilla extract
- 2 tbsp maple syrup
Preparation
Put the rice in a sieve and rinse under cold water until the water runs clear, then drain well.
Put the rice, vanilla extract, maple syrup, and 1 cup of almond milk in a large pan over low heat.
Cook, stirring continuously, until almost all the milk is absorbed.
Add another cup of almond milk and repeat the process until all the milk is used, adding one cup at a time.
Keep the heat low and stir continuously throughout the cooking process.
Check if the rice is tender but not mushy or chalky, and if necessary, add another half cup of almond milk.
