No-Bake Bunny Splash Cheesecake

Ingredients

Base

  • 40g Grape Nuts
  • 1/2 tablespoon erythritol gold
  • Raspberry flavor
  • 1 tablespoon hot water

Filling

  • 3 Laughing Cow extra light cheese triangles
  • 0.5 Lindahl's kvarg white chocolate
  • Food coloring
  • Raspberry flavor

Topping

  • 5g Ruby chocolate
  • 1 white chocolate Maltesers bunny

Preparation

  1. Blitz the Grape Nuts into a fine crumb.

  2. Mix the crumb with 1/2 tablespoon erythritol gold, raspberry flavor, and 1 tablespoon hot water, then press into a lined 3.5-inch chef's ring.

  3. Mix the 3 Laughing Cow extra light cheese triangles, 0.5 Lindahl's kvarg white chocolate, food coloring, and raspberry flavor, then add to the ring.

  4. Refrigerate overnight.

  5. Melt 5g Ruby chocolate and drizzle it over a partially inflated water balloon.

  6. Add the white chocolate Maltesers bunny.
