Creamy Asparagus and Mushroom Pasta
Ingredients
Sauce
- 1 cup of cashews (soaked overnight)
- 1 jar of chargrilled capsicums
- 1/4 cup of nutritional yeast
- Juice of 1 lemon
Pasta components
- 2 cloves of garlic
- 1 onion
- 1 bunch of asparagus
- 200g of mushrooms
- 1 punnet of cherry tomatoes
- Olive oil for frying
- @keepitcleaner Chickpea Pasta (or pasta of choice, cooked following packet instructions)
Preparation
Blend the sauce ingredients together until you get a smooth consistency. Add a splash of water if needed.
Cook the pasta according to package instructions
Fry garlic and onion in a pan until transparent.
Add mushrooms and asparagus and cook for 5 minutes to soften.
Add cherry tomatoes and cook for a few more minutes, squishing them to pop and release their juices.
Add the pasta to the pan and stir through.
Pour the sauce over the top and mix well.
Serve seasoned with salt and pepper.
