Creamy Aspargus & Mushroom Pasta
Ingredients
- 2 cloves of garlic
- 1 onion
- 1 bunch of asparagus
- 200g of mushrooms
- 1 punnet of cherry tomatoes
- olive oil for frying
Preparation
For the sauce: 1 cup of cashews (soaked overnight), 1 jar of chargrilled capsicums, 1/4 cup of nutritional yeast, juice of 1 lemon
Grab your sauce ingredients and blend together until you get a smooth consistency. Add a splash of water if you feel it needs it
Fry your garlic and onion in pan until transparent. Adding mushrooms and asparagus to soften for 5 minutes
Next add your cherry tomatoes cook for a further few minutes squishing them to pop and release their juices
Add pasta to pan and stir through then pour your sauce over top. Mix well
Serve seasoned with salt and pepper
