Creamy Cheesy Courgette and Brussels Sprout Spaghetti

Ingredients

  • 1-2 generous handfuls of Brussels sprouts
  • 2 courgettes

Sauce

  • 1/2 large sweet potato
  • 1 tbsp of tahini
  • 2 tbsp of nutritional yeast
  • 1 large roasted garlic clove
  • sea salt and pepper
  • squeeze of lemon juice
  • roughly 1 cup of almond milk

Preparation

  1. Blend the sauce ingredients until thick and creamy.

  2. Roast a generous handful of Brussels sprouts for 20 minutes.

  3. Spiralize two courgettes.

  4. Heat the Brussels sprouts and courgettes in a pan for a couple of minutes.

  5. Stir in the cheesy sauce.

  6. Ensure not to overcook to keep it firm.
