Creamy Pea and Avocado Pasta Dressing with Hidden Greens
Ingredients
- 2-3 servings pasta of choice
- 1.5 - 2 large, ripe avocados
- 3 garlic cloves
- Roughly 100g frozen green peas (defrosted)
- 1/2 tbsp lime or lemon juice
- 1 tbsp oil
- EITHER 60-70ml plant-based cooking cream, OR vegan Turkish yogurt, OR soy yogurt (thicker alternative)
- Salt and white pepper
- Handful of fresh basil
- Sesame seeds (optional)
- Tahini (optional)
- Vegan parmesan (optional)
- Sea salt (optional)
- White beans or silken tofu (for added protein and thickness)
Preparation
Cook the pasta according to the instructions on the package.
In a mixer or food processor, combine the ripe avocados, garlic cloves, defrosted green peas, lime/lemon juice, oil, salt, pepper, and fresh basil.
Gradually add the plant-based cooking cream, vegan Turkish yogurt, or soy yogurt to the mixture until you achieve the desired creamy consistency.
If you want a thicker sauce with added protein, consider adding white beans or silken tofu to the mixture.
Blend all the ingredients together until smooth and creamy.
Adjust the seasoning with salt and white pepper to taste.
Optional: 7. To enhance the nutritional profile, you can sprinkle sesame seeds for extra crunch and calcium.
Drizzle tahini over the pasta dressing for added creaminess and flavor.
If desired, top the pasta dressing with vegan parmesan for a cheesy touch.
Finish with a pinch of sea salt and fresh basil for garnish.
