Creamy Scrambled Tofu with Mild Round Flavor
Ingredients
- 1 tbsp olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tbsp water⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 500 g firm natural tofu⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp turmeric⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tsp vegetable bouillion powder⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 3 tbsp nutritional yeast⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 200 ml creamy coconut milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
- salt & black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparation
Chop onion n garlic. Heat the frying pan, add olive oil and onions. Add a lil water, it helps the onion to soften without having to add more oil. Sautée on low-medium heat for 6-7 mins until the onion has softened and starts to turn golden. Add finely chopped garlic and fry for 1 min.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Meanwhile: open the tofu package, discard the brine and rinse the tofu block under running water for a few secs. Put the block in a bowl and mash it with a fork until crumbly. Add turmeric, veg bouillion powder, nutritional yeast and coconut milk, give it a stir.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Pour the tofu mix into the frying pan when the onions are done. Let simmer for 2 mins while stirring. Take off heat and stir in chopped herbs, salt and black pepper.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Serve with tortillas or toast, tomatoes also go very well with it! Enjoy
