Creamy Vegan Pumpkin Soup

Ingredients

  • 1/2 white onion
  • minced garlic
  • 2 15 oz cans pumpkin puree
  • 1/2 teaspoon salt
  • 1 teaspoon chili powder
  • pinch of cinnamon
  • pinch of nutmeg
  • 2 cups vegetable broth
  • coconut milk (for garnish)
  • parsley (for garnish)
  • pumpkin seeds (for garnish)

Preparation

  1. Sauté the chopped 1/2 white onion with minced garlic.

  2. Add the pumpkin puree, salt, chili powder, cinnamon, nutmeg, and vegetable broth.

  3. Blend the mixture and simmer it.

  4. Garnish with coconut milk, parsley, and pumpkin seeds.
