Creamy Vegetable Au Gratin
Ingredients
- 2 tablespoons olive oil
- 1.5 cups cold milk
- 2 teaaspoons whole wheat flour
- 1/2 teaspoon pepper powder
- 1/2 teaspoon dried orgeano
- salt to taste
- 1 small carrot
- 1/2 cup cauliflower florets
- 1/2 cup chopped beans
- 1/4 cup fresh green peas
- 3/4 cup grated cheese
- 3/4 cup bread crumbs
Preparation
To make vegetables in white sauce: wash, peel and chop the vegetables. Steam or par boil the vegetables for 5 minutes. Drain and set aside. In a pan, heat the oil and Add the flour and saute very well till the raw smell leaves. Lower the flame and add cold milk in slow stream. Keep stirring to avoid lump formation
Simmer and keep stirring till the sauce thickens
Once the sauce is thick and smooth, add salt, pepper powder and oregano. Now add the steamed vegetables and mix well. Remove from flame. In the meanwhile preheat oven at 190C.
To make vegetable au gratin
Pour the prepared vegetables in white sauce into baking dish
Add grated cheese on top
Top with bread crumbs. Bake in the preheated oven for 15-18 minutes
At times I like to create layers wherein I keep the vegetables at the bottom and nappe with white sauce
