Crispy Chilli Oil

Ingredients

  • 3-4 large shallots
  • 2 bulbs of garlic
  • 4 star anise
  • 1 stick cinnamon
  • 2 black cardamoms
  • 100g dried red chilli
  • 500ml oil of choice (light olive oil or peanut oil)
  • Salt to taste

Preparation

  1. Pop on gloves and cut open the chillies. Remove the seeds and crush into chilli flakes. Set aside.

  2. Finely slice or chop the shallots.

  3. Peel and chop/thinly slice the garlic.

  4. Heat the oil in a pan over medium heat. Once hot, add the shallots, cinnamon stick, star anise, and cardamoms.

  5. Be careful not to burn the onions. Cook them until they're brown and crispy but not burnt. Lower the heat to low, add the garlic, and mix well to cook the garlic without burning it.

  6. Add the chilli flakes and salt to taste. Stir well and turn off the heat.

  7. Once cool, store in an airtight container in the fridge.
