Crispy Potato Wedge
Ingredients
- white russet potatoes
- 2 tbsp olive oil
- green pesto
- 2 tsp garlic powder
Preparation
Pre-heat your oven to 180C⠀
Then wash and cut up a few large white russet potatoes into wedges. Place them on a baking tray
In a bowl, whisk together 2 tbsp olive oil, 1 heaped tsp of free from green pesto and 2 tsp garlic powder to form a marinade. Then pour that over your wedges and use your hands or to evenly coat the wedges in it. ⠀
With clean hands, sprinkle over some sea salt and a good grinding of black pepper. Then bake in the oven for 30 minutes until crispy and golden. Serve with a sprinkling of fresh (or dried) coriander/parsley OR mixed herbs
