Crispy Tangy Apple Slaw

Ingredients

  • 1 cup red cabbage shredded
  • 1 cup white cabbage shredded
  • 1 cup apple grated
  • 1 cup carrot grated
  • 1/4 cup flat leaf parsley finely chopped

Preparation

  1. Grate the apple, carrot, and shred the cabbage.

  2. Finely chop the parsley.

  3. Combine all the shredded and chopped ingredients in a bowl.

  4. Add the creamy cider vinegar dressing and mix well.

  5. Toast the pumpkin seeds and sprinkle them on top before serving.
