Vegan Gluten-Free Peanut Butter Rice Crispy Squares
Ingredients
- 1/2 cup vegan butter
- 1 bag vegan gluten-free marshmallows
- 1/2 cup crunchy peanut butter
- 1 teaspoon vanilla
- 4 cups puffed rice
Topping
- 1 bar Lily's chocolate
- 1 teaspoon coconut oil
- Maldon sea salt
Preparation
In a large pot, melt butter.
Add marshmallows and melt them.
Once melted, add vanilla and peanut butter, stir to combine.
Add puffed rice and mix thoroughly.
Grease or line an 8.5x8.5 baking dish and press the mixture firmly into it.
Place in the fridge to set.
Chop a bar of Lily's chocolate and melt it with 1 teaspoon of coconut oil.
Spread the chocolate on top of the crispies and sprinkle with Maldon sea salt.
Wait until set, then heat a sharp knife to slice.
