Curry

Ingredients

  • 1tbsp oil •1 onion •1 garlic clove •400ml coconut milk • 2 carrots
  • a handful of fresh or frozen broccoli & another one with edamame or another veggie of your choice • 1tsp tumeric •2 tbsp curry spice •1tsp salt • 1/2 tsp pepper

Preparation

  1. Cook a rice of your choice (I used whole grain basmati rice)

  2. While the rice is cooking, prepare the curry

  3. Cut the onion into small pieces and fry it in a big pan/pot with the oil

  4. In the meanwhile quickly cut the carrots and add them to the onions

  5. Fry for 1-2 min and add the rest of the ingredients (not the garlic though) Bring to a boil and let it simmer for ~5-10 min

  6. Cut the garlic into small pieces and add it last

  7. Optional: add 1tbsp peanut butter

  8. For topping I also added some salted peanuts

  9. The amount of salt & pepper may vary depending on your personal taste
