Dinner

Ingredients

  • Dinner was this plate of yummy sweet potato / red lentil / spinach dahl ? For this I heated some sesame oil in a pan
  • added one red onion and cooked it until softened. Then I added one clove of garlic
  • a thumb size piece of ginger and 1 red pepper and cooked that for 1 minute
  • then I added 1 1/2 tsp of cumin
  • 1 tsp of cayenne and 1 1/2 tsp of turmeric. After that I added one large sweet potato and cooked that for about 3 minutes. To this mixture I added about a cup of red lentils and 600ml of vegetable stock. After I brought it to a boil
  • I cooked it on low for about 20 minutes. Don't forget to stir because mine burned a bit to the bottom ? In the end I stirred in about 3 hands full of spinach and once I found it shrinked enough
  • I presented it with some sesame seeds and green onion. No salt needed
  • because it has so much flavour on its own! Serves 4! ?? I think it would be even better with naan but I only used ingredients I had on hand today ☺
