Double Choc Brownies

Ingredients

  • 185gms unsalted butter
  • 185gms dark chocolate
  • 85gms plain flour
  • 40gs cacao powder
  • 100gms white chocolate
  • 3 large eggs
  • 275gms golden caster sugar

Preparation

  1. First break the dark chocolate into small chunks and melt with the butter in a microwave, 1 min at a time into its fully melted. Leave to cool

  2. Preheat oven for 160’c fan & grease/line a 20cm square baking tin

  3. Whisk the eggs & sugar with an electric whisk until the mixture doubles in volume and is thick & creamy

  4. Pour the cooled chocolate/butter mix into the egg/sugar mix and gently fold to mix

  5. Sieve the flour and cacao powder and gently fold this into the mix too

  6. Roughly chop the white chocolate and add to the mix

  7. Be careful to fold in the ingredients gently so as to not knock out all the air

  8. Pour mix into baking tin

  9. Bake in oven for about 25 mins - check and add a few mins if needed. It should have a shiny papery crust & the sides just beginning to come away
