Dr. Greger's Vegan Peach Crisp

Ingredients

Topping

  • 1 c old-fashioned oats
  • 1/2 c raw pecans
  • 1/4 c pitted dates
  • 1/4 c date sugar
  • 1/2 tsp ground cinnamon

Filling

  • 1/4 c soaked cashews
  • 4 c sliced peaches
  • 1/3 c date sugar
  • 1 tsp peeled lemon
  • 1/4 tsp vanilla bean

Preparation

  1. Preheat oven or air fryer to 180°C

  2. Prepare the filling by mixing sliced peaches, date sugar, soaked cashews, peeled lemon, and vanilla bean in a bowl

  3. Prepare the topping by combining oats, pecans, pitted dates, date sugar, and ground cinnamon until crumbly

  4. Spread the filling evenly in a baking dish

  5. Sprinkle the topping over the filling

  6. Bake or air fry until crispy and golden brown, about 30-40 minutes
