Easy Apple Rose Pastries
Ingredients
- 2 large apples, preferably honey crisp
- Juice from half a lemon
- Water
- 3 Tbsp apricot jelly
- 1 tsp water
- Cinnamon
- Coconut sugar
- Pastry dough
Preparation
Preheat the oven to 375 degrees Fahrenheit.
Clean the apples, core them, and cut them in half vertically from stem to base.
Place the cut side down and carefully cut thin slices from the base to the top of each apple half.
Squeeze the juice from half a lemon into a bowl and add water to fill it halfway. Stir the mixture.
Place the apple slices in the lemon-water mixture, ensuring they are just covered with the liquid.
Microwave the apple slices for about 3 minutes, until they are softened but still hold their shape.
Roll out the pastry dough to a length of 12 inches and a width of 3 inches.
In a small bowl, microwave the apricot jelly and water for 1 minute. Mix well.
Spread the jelly mixture over the pastry strips.
Sprinkle cinnamon and coconut sugar over the jelly-covered pastry strips.
Place an apple half at one end of a pastry strip, ensuring the apple skin is on the outside and hangs slightly over the edge.
Continue to lay the microwaved apple slices across the full length of the pastry strip, slightly overlapping each slice.
Fold the dough over the apples so that only the part over the edge of the dough is visible.
Loosely roll up the pastry and apple slices, forming a rose-like shape.
Spray coconut oil in a muffin tin and add a coating of coconut sugar.
Place each rose-shaped apple pastry into a muffin tin opening.
Bake in the preheated oven for approximately 40 minutes, or until the pastries are golden brown and cooked through.
