Easy Banana Chocolate Chip MuffinsGluten Free-Low Sugar- Paleo

Ingredients

  • 3 small or 2 large mashed banana
  • 1/2 cup almond butter (or any nut butter)
  • 1 tsp baking soda
  • 1.5 cups almond flour
  • 1/2 cup chocolate chips
  • dash of salt
  • 1/2 tsp cinnamon
  • 1 flax egg ( 1 tb ground flax + 3 tb water)

Preparation

  1. Preheat oven to 350

  2. Mix flax egg set aside 10 minutes

  3. Mash bananas well with fork or potato masher

  4. Combine almond butter and mix well with banana

  5. Add all other ingredients except chocolate chips and mix well

  6. Fold in chocolate chips

  7. Line muffin tin with cupcake liners or grease pan well

  8. Fill muffin pan and bake for 20-23 minutes

  9. I prefer to store almond flour goodies in the fridge

  10. Enjoy
