Easy Microwave Diwali Penda
Ingredients
- 1 tin sweetened condensed milk (397g)
- 2 heaped tablespoons ghee or unsalted butter
- 2 cups milk powder
- 2 tablespoons milk
- Pinch of saffron (optional)
- Pinch of ground cardamom (optional)
- Pistachios and rose petals for decoration
Preparation
Melt the ghee in the microwave, heat the milk, and add both to a large bowl with the saffron and cardamom.
Stir in the milk powder and condensed milk, then mix well until you have a smooth paste.
Microwave the mixture for 1 minute.
Stir really well to ensure there are no lumps.
Repeat microwaving for 1 minute and stirring well twice. The mixture should become a thick batter that starts to solidify as it cools; if not, heat in 30-second intervals and mix well.
Allow the mixture to cool slightly until it is cool enough to handle, then press it into mini cupcake molds before it hardens.
After a few minutes, remove from the molds; they should still be soft.
Press chopped pistachios and rose petals onto the penda.
Leave to fully cool and firm up.
