Easy Mini Vegan Frozen Raspberry and Almond Cheesecake Hearts

Ingredients

  • raspberry center:
  • handful of raspberries
  • 1/2 cup limonade
  • 2 tsp agar agar
  • almond cake:
  • 3/4 cup almond flour
  • 2 tbsp cornstarch
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 3 tbsp melted coconut oil
  • 1/2 cup plant based milk

Preparation

  1. Raspberry insert : place all ingredients into pan, heat on medium and boil few minutes

  2. Sieve the mixture

  3. Lined a tray with plastic wrap

  4. Pour the preparation into it

  5. Place in fridge 30 minutes or until completely set

  6. Cut your heart shape

  7. Set aside

  8. Almond cake : pour all ingredients into bowl, stir

  9. Lined a baking tray with parchment paper

  10. Spread the batter on top

  11. Bake at 350 f for 10-15 or until toothpick comes out clean

  12. Let cool completely

  13. With a heart cutter, cut hearts into the cake

  14. Set aside

  15. Assembling : pour a bit of raspberry cheesecake in the bottom of mold, then on top pour raspberry insert, on top the almond cake and finish by more cheesecake mixture

  16. Place in freezer for 2-3 hours or until completely set

  17. Before serving, let the mini hearts at room temperature few minutes
