Easy Mini Vegan Frozen Raspberry and Almond Cheesecake Hearts
Ingredients
- raspberry center:
- handful of raspberries
- 1/2 cup limonade
- 2 tsp agar agar
- almond cake:
- 3/4 cup almond flour
- 2 tbsp cornstarch
- 2 tbsp sugar
- 1 tsp baking powder
- 3 tbsp melted coconut oil
- 1/2 cup plant based milk
Preparation
Raspberry insert : place all ingredients into pan, heat on medium and boil few minutes
Sieve the mixture
Lined a tray with plastic wrap
Pour the preparation into it
Place in fridge 30 minutes or until completely set
Cut your heart shape
Set aside
Almond cake : pour all ingredients into bowl, stir
Lined a baking tray with parchment paper
Spread the batter on top
Bake at 350 f for 10-15 or until toothpick comes out clean
Let cool completely
With a heart cutter, cut hearts into the cake
Set aside
Assembling : pour a bit of raspberry cheesecake in the bottom of mold, then on top pour raspberry insert, on top the almond cake and finish by more cheesecake mixture
Place in freezer for 2-3 hours or until completely set
Before serving, let the mini hearts at room temperature few minutes
