Easy Peanut Butter Cookies

Ingredients

  • 100g butter
  • 100g sugar
  • 125g peanut butter
  • 1 tsp vanilla extract
  • 1 egg
  • 200g plain flour
  • 1/2 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 50g crushed walnuts or peanuts

Preparation

  1. Line 2 baking trays with greaseproof paper and preheat the oven to 180°C (fan)/Gas Mark 4.

  2. Beat the butter until soft. Add the sugar and continue beating.

  3. Add the peanut butter, vanilla extract, and egg to the mixture. Mix until well combined.

  4. Sift the flour, baking powder, and bicarbonate of soda into the mixture.

  5. Stir in the crushed nuts.

  6. Take handfuls of the dough, shape them into rounds, and slightly flatten them. This should yield 16-20 cookies.

  7. Place the cookies on the baking trays, leaving 10cm of space between each one.

  8. Bake for 10 minutes. The cookies will still be slightly soft in the middle.

  9. Allow the cookies to cool for 5 minutes on the baking trays before transferring them to a cooling rack.
