Easy Vegan Black Bean Sliders

Ingredients

  • 15 oz can of black beans drained
  • rinsed
  • & dried
  • 1/2 onion
  • 1/2 red pepper
  • 2 cloves of garlic
  • 2 tbl cilantro
  • 2 green onions
  • 1/2 cup cooked quinoa
  • 1/4 cup panko
  • 2 tbl nutritional yeast
  • 1 tbl red wine vinegar
  • 2 tsp cumin
  • 1 tsp oregano
  • 1 tsp smoked paprika
  • 1 tsp Worcestershire sauce
  • cayenne pepper(optional for some heat)salt/pepper to taste

Preparation

  1. In a large bowl, mash black beans with a potato masher or the back of a fork, leaving some texture by leaving some beans partially mashed . Set aside

  2. In a food processor, combine onion, pepper, garlic, cilantro, & green onions and pulse till roughly chopped. Strain out extra water

  3. On stovetop over med heat, take chopped herbs, onions, & pepper & cook until softened about 3 min

  4. Once cooled, add to mashed black beans, then add the rest of the ingredients & mix well. Taste, adjust seasonings. Set in fridge for 30min

  5. Form sliders using 1/4 cup of black bean mix. Making around 6-7 sliders

  6. On a well oiled pan over medium heat, cook sliders 5 min on each side. Enjoy with your favorite burger toppings
