Easy Vegan Peanut Butter Blondies

Ingredients

  • 1 can of chickpeas (400 g)
  • 65 g of peanut butter
  • 4-5 soaked dates
  • 1 tbs plant milk
  • 1/2 tsp vanilla powder
  • small pinch of salt
  • 1 tsp baking powder
  • 30 g chocolate chips

Preparation

  1. Combine everything in a blender and mix until smooth.

  2. Mix in the chocolate chips and place the mixture in a pan.

  3. Bake the blondies for 20-30 min at 180 °C.

  4. Let the blondies cool before you remove them from the pan.

  5. For a low fat version, use PB2 instead of peanut butter and replace the chocolate chips with cacao nibs.
