Edamame and Broccoli Quinoa Stir Fry
Ingredients
- 1 onion, diced
- 3 garlic cloves, finely chopped
- 1 medium broccoli head, cut into florets
- 1.5 cups edamame beans
- 1 cup quinoa, rinsed and drained
- 1/4 tsp fennel seeds
- 1/4 tsp cumin seeds
- 1/2 tsp dried coriander
- 1 tsp sesame seeds
- 2 tbsp tamari
- 2 tsp sesame oil
- Salt and pepper
- Fresh coriander, to serve (optional)
Preparation
Cook quinoa according to packet directions and set aside.
Meanwhile, steam the broccoli florets and edamame beans and set aside.
In a large frying pan, sauté the onion, garlic, seeds, and coriander until soft and golden. Add the edamame and broccoli, and cook for a further 5 minutes.
Add the cooked quinoa and combine everything well. Add the sesame oil and tamari, and stir well again. Let the mixture cook for a few more minutes to absorb the flavors, season with salt and pepper as desired, then serve with a sprinkle of fresh coriander.
