Edamame and Broccoli Quinoa Stir Fry

Ingredients

  • 1 onion, diced
  • 3 garlic cloves, finely chopped
  • 1 medium broccoli head, cut into florets
  • 1.5 cups edamame beans
  • 1 cup quinoa, rinsed and drained
  • 1/4 tsp fennel seeds
  • 1/4 tsp cumin seeds
  • 1/2 tsp dried coriander
  • 1 tsp sesame seeds
  • 2 tbsp tamari
  • 2 tsp sesame oil
  • Salt and pepper
  • Fresh coriander, to serve (optional)

Preparation

  1. Cook quinoa according to packet directions and set aside.

  2. Meanwhile, steam the broccoli florets and edamame beans and set aside.

  3. In a large frying pan, sauté the onion, garlic, seeds, and coriander until soft and golden. Add the edamame and broccoli, and cook for a further 5 minutes.

  4. Add the cooked quinoa and combine everything well. Add the sesame oil and tamari, and stir well again. Let the mixture cook for a few more minutes to absorb the flavors, season with salt and pepper as desired, then serve with a sprinkle of fresh coriander.
