Elderberry Gummies with Agar Agar

Ingredients

  • 1/4 cup homemade elderberry syrup
  • 2-3 tbsp agave sweetener
  • 1/4 cup water
  • 3 tsp agar agar powder

Elderberry syrup

  • 1 cup dried elderberries
  • 1/2 cup fresh berries (blueberries and blackberries)
  • 1 cup agave sweetener
  • 1/2 tbsp cloves
  • 1 tbsp fresh ginger
  • 1 tsp lemon zest
  • 1 tsp orange zest
  • 3 1/2 cups water
  • 1 cinnamon stick

Preparation

  1. Combine the elderberry syrup, water, and agar agar powder in a pot.

  2. Bring the mixture to a boil and let it simmer for 2-3 minutes.

  3. Stir the mixture until the agar agar powder is completely dissolved.

  4. Once the mixture has cooled down a little, add the agave sweetener and mix thoroughly.

  5. Fill the elderberry mixture into the molds.

  6. Refrigerate for 1-2 hours until it is set.

  7. Store the elderberry gummies in a closed and airtight container in the refrigerator.

Elderberry syrup

  1. Bring all ingredients except the agave sweetener to a boil in a medium-sized saucepan.

  2. Reduce the heat and let it simmer on low heat for 40-45 minutes.

  3. Mash the elderberries, then strain them from the syrup using a wire mesh strainer over a large bowl.

  4. Mix in the agave sweetener when the syrup has cooled to room temperature, then pour into an airtight container and store in the refrigerator.
