Elderberry Gummies with Agar Agar
Ingredients
- 1/4 cup homemade elderberry syrup
- 2-3 tbsp agave sweetener
- 1/4 cup water
- 3 tsp agar agar powder
Elderberry syrup
- 1 cup dried elderberries
- 1/2 cup fresh berries (blueberries and blackberries)
- 1 cup agave sweetener
- 1/2 tbsp cloves
- 1 tbsp fresh ginger
- 1 tsp lemon zest
- 1 tsp orange zest
- 3 1/2 cups water
- 1 cinnamon stick
Preparation
Combine the elderberry syrup, water, and agar agar powder in a pot.
Bring the mixture to a boil and let it simmer for 2-3 minutes.
Stir the mixture until the agar agar powder is completely dissolved.
Once the mixture has cooled down a little, add the agave sweetener and mix thoroughly.
Fill the elderberry mixture into the molds.
Refrigerate for 1-2 hours until it is set.
Store the elderberry gummies in a closed and airtight container in the refrigerator.
Elderberry syrup
Bring all ingredients except the agave sweetener to a boil in a medium-sized saucepan.
Reduce the heat and let it simmer on low heat for 40-45 minutes.
Mash the elderberries, then strain them from the syrup using a wire mesh strainer over a large bowl.
Mix in the agave sweetener when the syrup has cooled to room temperature, then pour into an airtight container and store in the refrigerator.
