Elderberry Gummies with Agar Agar

Ingredients

  • 1/4 cups of homemade elderberry syrup 2-3 tbsp. agave sweetener⠀
  • 1/4 cups of water⠀
  • 3 tsp agar agar powder⠀
  • 1. combine the elderberry syrup, water and the agar agar powder in a pot.⠀
  • 2. bring the mixture to a boil and let it simmer for 2-3 minutes.⠀
  • 3. stir the mixture until the agar agar powder is completely dissolved.⠀
  • 4. once the mixture has cooled down a little, add the agave sweetener and mix thoroughly. 5. fill the elderberry mixture into the molds.⠀
  • 6. refrigerate for 1-2 hours until it's set.⠀
  • 7. store the elderberry gummies in a closed and airtight container in the refrigerator.⠀

  • 1 cup of dried elderberries⠀
  • 1/2 cup of fresh berries (i used blueberries and blackberries) 1 cup of agave sweetener⠀
  • 1/2 tbsp. cloves⠀
  • 1 tbsp. of fresh ginger (finely chopped)⠀
  • 1 tsp. lemon zest⠀
  • 1 tsp. orange zest⠀
  • 3 1/2 cups of water⠀
  • 1 cinnamon stick⠀

Preparation

  1. Bring all ingredients (except the Agave Sweetener) to a boil in a medium sized saucepan. 2. Reduce the heat and let it simmer in low heat for 40-45 minutes.⠀

  2. Mash the Elderberries, then place a wire mesh strainer over a large bowl and strain the Elderberries from the Syrup.⠀

  3. Mix in the Agave Sweetener when the Syrup has cooled down to about room temperature. Pour the Syrup into an airtight container, such as an Mason Jar and store it in the refrigerator.⠀
