Favorite Vegan Caesar Dressing with Cashews
Ingredients
- 1 cup raw cashews
- 1/2 cup water
- 2 tablespoons extra virgin olive oil
- Juice and zest of 1 small lemon (about 2 tablespoons juice)
- 1 tablespoon Dijon mustard
- 1 large clove of garlic
- 1 tablespoon vegan Worcestershire sauce (e.g., Annie's Homegrown)
- 1 heaping tablespoon capers
- 1 teaspoon hemp hearts
- 1 tablespoon nutritional yeast
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground pepper
- A dash of parsley flakes for color
Preparation
Soak the cashews overnight before using.
Add all ingredients to a blender and blend until smooth.
