Figgy Chocolate Snack Bars
Ingredients
- 1 cup dried figs
- 1/3 cup nut/seed butter
- 2 cups puffed millet (or any puffed cereal)
- 1/2 cup pumpkin seeds
- 1/2 cup hemp seeds
- 1/4 cup chia seeds
- 1/2 tsp sea salt
- 1 tsp cinnamon
- 2/3 cup dark chocolate chips
Preparation
Soak dried figs in warm water for 30 minutes. Drain and pat dry.
Blend figs and nut/seed butter in a blender or food processor to a sticky paste.
Toss together puffed millet, seeds, salt, and cinnamon.
Add the fig paste to the mixture and mix well.
Press the mixture into a pan lined with parchment paper and refrigerate.
Melt the chocolate chips.
Pour the melted chocolate on top of the bars and smooth it out.
Chill the bars for at least two hours until firm.
Slice into bars and enjoy!
