Gluten-Free Pear & Chocolate Buckwheat Pudding

Ingredients

  • 1 cup buckwheat flour
  • 1/2 cup oat flour
  • 1/4 cup ground almonds
  • 3 eggs
  • 1 pear and dark chocolate chips
  • 1/4 cup oat milk
  • 1/4 tsp baking soda + 1/2 tbsp white vinegar
  • Optional: Cinnamon
  • Vanilla essence (or vanilla extract)

Preparation

  1. In a bowl, beat the eggs and sift the flours. Add the baking soda and vinegar mixture and mix well.

  2. Add cinnamon and vanilla essence along with the oat milk. Mix until there are no lumps.

  3. Transfer the mixture to a parchment paper-lined pudding mold. Slice the pear thinly and arrange the slices on top of the mixture. Finally, add the dark chocolate chips.

  4. Bake at 180°C (350°F) for 40 minutes. After baking, let it sit for 5 minutes before opening the oven to prevent it from deflating.
