Green Gazpacho with Avocado and Cucumber

Ingredients

  • 2 avocados
  • 1 cucumber
  • 2 spring onions
  • 1.5 limes
  • 0.5 lemon
  • 5 tbsp soy yogurt
  • 200ml vegetable broth
  • salt, pepper
  • 0.5 handful chives
  • Pinch of chilli
  • Oil

Preparation

  1. Add avocado pulp, yogurt, chives, vegetable broth, lime juice, lemon juice and chopped cucumber to a bowl

  2. Chop onion and softly glaze in oil

  3. Add 3/4 of the onion to the bowl

  4. Puree all together

  5. Season with salt, pepper and chilli

  6. Serve with the remaining spring onion and more lime
