Green Gazpacho with Avocado and Cucumber
Ingredients
- 2 avocados
- 1 cucumber
- 2 spring onions
- 1.5 limes
- 0.5 lemon
- 5 tbsp soy yogurt
- 200ml vegetable broth
- salt, pepper
- 0.5 handful chives
- Pinch of chilli
- Oil
Preparation
Add avocado pulp, yogurt, chives, vegetable broth, lime juice, lemon juice and chopped cucumber to a bowl
Chop onion and softly glaze in oil
Add 3/4 of the onion to the bowl
Puree all together
Season with salt, pepper and chilli
Serve with the remaining spring onion and more lime
