Green Goddess Chickpea Salad Wrap
Ingredients
- 1 can chickpeas drained & rinsed
- 2 celery stalks finely chopped
- 2 green onions finely chopped
- 1 garlic clove minced
- 1/4 dill pickles finely chopped
- 1/4 cup packed basil
- 1/4 cup parsley
- 1/4 cup vegan mayo
- 1/4 cup vegan sour cream
- 2tbl water
- 2 tbl tahini
- 1tsp lemon zest
- 2 tbl lemon juice, sea salt/black pepper to taste
Preparation
Mash chickpeas with potato masher/back of fork in a mixing bowl, add chopped celery, green onion, pickles, & garlic, mix well
In a blender, combine rest of the ingredients till smooth
Add dressing to chickpea mix
