Green Goddess Chickpea Salad Wrap

Ingredients

  • 1 can chickpeas drained & rinsed
  • 2 celery stalks finely chopped
  • 2 green onions finely chopped
  • 1 garlic clove minced
  • 1/4 dill pickles finely chopped
  • 1/4 cup packed basil
  • 1/4 cup parsley
  • 1/4 cup vegan mayo
  • 1/4 cup vegan sour cream
  • 2tbl water
  • 2 tbl tahini
  • 1tsp lemon zest
  • 2 tbl lemon juice, sea salt/black pepper to taste

Preparation

  1. Mash chickpeas with potato masher/back of fork in a mixing bowl, add chopped celery, green onion, pickles, & garlic, mix well

  2. In a blender, combine rest of the ingredients till smooth

  3. Add dressing to chickpea mix
