Green Sun Flower Seed Pate with Parsley
Ingredients
- 75 ml fresh lemon juice
- 1/2 tsp sea salt
- 2 dates de-pitted
- 50 ml olive oil
- 1 bunch parsley washed & coarsely chopped
- water as needed
Preparation
Place sunflower seeds into bowl with water for 4 hours and after rinse well, remove as many seed covers you can by filling the bowl with water and they will flow up on top, you can easily pour them into strainer
Discard the seed covers and rinse again the seeds, after let dry
Put activated sunflower seeds into food processor with s-blade or blender and add all ingredients and let it blend till smooth, add little by little water to get right consistency
Serve with zucchini croquettes, crackers or on lettuce leaves, maybe just as side dish
Storage: 3 days in air tight container below 4 celsius degrees
