Griddled Zucchini Salad with Straciatella

Ingredients

  • 2 zucchinis
  • 1 garlic clove
  • 1/2 red chili
  • 1/2 shallot
  • 1 lemon (juice and zest)
  • Handful fresh mint
  • Handful fresh basil
  • 4 tablespoons straciatella
  • Salt
  • Pepper
  • Extra virgin olive oil

Preparation

  1. To make the dressing, mince the garlic, then combine with finely diced chili and shallot. Add chopped mint, the zest and juice of a lemon, salt, and pepper, then slowly stream in olive oil by whisking until a creamy vinaigrette forms, around 50ml.

  2. Slice the courgettes into rounds, season with salt, pepper, and olive oil. Heat up a griddle pan until smoking, then sear the courgettes on each side until griddled, 2-3 minutes.

  3. To serve, place the courgettes onto a plate, then top with basil leaves, dollops of straciatella, and lashes of dressing.
