Grilled Corn with Oil-Free Basil Pesto

Ingredients

  • Soak 1 cup raw cashews in water at least 2 hours
  • Drain and add to blender along with 1 cup chopped zucchini and a large bunch of fresh basil
  • Blend well
  • Add salt to taste

Preparation

  1. I have such big plans for this pesto now that basil is growing well in the backyard

  2. Pasta, sandwiches, salads, grilled veggies, pizzas

  3. The possibilities are endless
