Grilled Corn with Oil-Free Basil Pesto
Ingredients
- Soak 1 cup raw cashews in water at least 2 hours
- Drain and add to blender along with 1 cup chopped zucchini and a large bunch of fresh basil
- Blend well
- Add salt to taste

I have such big plans for this pesto now that basil is growing well in the backyard
Pasta, sandwiches, salads, grilled veggies, pizzas
The possibilities are endless
