Grilled Eggplants with Mint and Vegan Mayonnaise

Ingredients

  • Black oval eggplants
  • Fresh mint
  • Pink peppercorns
  • Garlic (optional)
  • Vegan mayonnaise
  • Extra virgin olive oil
  • Salt to taste

Preparation

  1. Slice the eggplants into medium slices and grill them on a hot griddle without oil until soft and well-marked.

  2. Once grilled, season them with a drizzle of extra virgin olive oil, a few pinches of salt, plenty of hand-torn fresh mint, and some lightly crushed pink peppercorns to release their aroma. Optionally add garlic.

  3. Put them in the refrigerator and before serving, add small dollops of vegan mayonnaise here and there.
